Not that I'm a cooking whiz or anything, but I made a comparable meringue with room temperature eggs, a pinch of salt to stabilize the mixture, vanilla and granulated sugar.
@selene0420 Dry Ice is just frozen carbon dioxide, so it's not poisonous, but it's ridiculously cold, so probably not a good idea to go popping a cube in your mouth. Being so cold makes it sterile too (like being too hot.. most nasties like it around room temperature to human body temperature :) ), if you meant that kind of hygienic...
Think liquid nitrogen, but frozen solid at temperatures that're above nitrogen's boiling point. :)
@selene0420 dry ice is safe to eat, just not in the solid form where it will freeze. If you think about it its simply just packed carbon dioxide. Some soda companies actually even use it to provide the carbonation in their sodas. so Solid - not recommended, added to something - pretty safe to eat
Imagine if as he bent down to place his fork in this baked Alaska for his first mouth watering bite and he stumbled and went face first into this labour of love. Ha ha ha.... hot, cold, sticky mess. He would start to cry no doubt. Or laugh.
wow.....so much effort- you have to admire an artist / scientist who puts so much time into his work- only to have it gobbled up by some rich banker pig who knows not of the suffering just to achieve the perfection.
imagine going to his restaurant and eating a meal that has had so much thought and care go into every single aspect. A meal he has researched empirically to achieve the best possible taste and texture. one day...
I mean , really it's nothing like vienetta. The colour and the shape may be similar but the composite parts that go to creating it are quite different.
its quite awesom...but way to complicated for food IMHO...but then again evryone has a different style =)

I can't understand why vienetta survives. It doesn't taste very good at all, very cheap ice cream. It's just well presented, I guess.
