Dear Miss Frenchie...I enjoyed your video...but, just so y'all know...many cajun spices have Monosodium Glutamate....if it says Citric Acid, Hydrolized Protein, Flavourings, Spices (non discript) or even says Natural Flavorings...all of that stuff is suspect....so, it makes me laugh about the sausages not having nitrates or whatever....but, I wanna wish you Happy Mardi Gras!
Miss Frenchie....If you freeze those adouiile sausages first...and then cut them into slices...You'll get yourself some nice pieces of sausages for your Red Beans and Rice....Y'all!

You put parsley in the sweating stage with the trinity? And then you drained all of the flavored grease from the sausage? Leave that in the pan!! This is sort of a fail..I bet it tasted OK, but it could be way better. I understand crockpots and such it changes methods a little, but your way loses too much flavor, I can tell.

AMAZING , That night the kids slept wit my wife & I because they do that some nights and all 4 of us were in our king size bed Farting and Laughing because those beans gave us some wonderful anal artillary. Lord knows u can't make good red beans without camilia bean...im from the coast originally ( Pass Christian) and i come home about twice a year...and load up on camillias ...the don't have them here...
You can also make this with white beans (great northern)... Same recipe and everthing, rice optional with the white beans, but traditional with red beans.
The red beans are often the main course here in Louisiana, while the white beans are often a side dish to jambalaya.

I have to say you are an authentic, Cajun lady. You know the art of making red beans and rice. Thank you for including the "Holy Trinity". Most people do not even know about those ingredients. I have to explain to them that without the "Holy Trinity", it is senseless to even have a finished product. Once the red beans are finished, it is scrumptious along with garlic French bread, and red wine. Now, mon cherie, I can honestly say is the perfect meal. Thank you ever so much for posting.

Camelia is a brand. I don't know how widely they're distibuted. Maybe check your Wal-Mart superstore grocery. Thanks for watching!
