OMG! I wish I could bake something like that. We just fixed our oven but I think it will take a loooong while until we will be able to bake something eatable. For now, it is just smoke all over the place hahaha
When you rake the coals out you can put them into a container with a tight cover on it and save them for later. That's a lot of good charcoal you made there, why waste it? Grill!

Why do you have that kid playing with the dough? I wouldn't eat bread baked by you. Not a good idea for the kid to be playing with the dough unless your breads are not for sale & for your family only. I don't care how clean a kid is, she shouldn't be playing with the dough. You can't wash flour. There is a reason why restaurants & food vendors have license.

b) Children are no more inherently dirty or infectious than adults. Why is it ok for an adult to bake bread and not a child?
c) The internal temperature of baking bread reaches no less than 190ºF. No food bug survives that kind of exposure.
d) A foodservice license is no guarantee of sanitation. It is a business tax. I'm sure Podchef has been ServSave® certified, and a restaurant only needs the supervisor to be so.

@Mrwiserfoodie Yeah, I'd say Bittman's recipe is good for people like me, who live in apartments and can't afford 10,000 dollar brick ovens. The texture is similar to what the guy pulled out of the brick oven, using just a dutch oven sitting in a conventional oven. And it only takes maybe a half hour to prepare. That is good bread, though someday I like to try out a large brick oven.

yuk! who likes hair in their bread? not me, otherwise it looks very very good.
I have a brother in law who prepares food like this, we have found arm hair in the food
so often, he no longer cooks, and to think he is supposed to be a high class chef....
but we love him anyway, we just dont let him mix by hand and arm anymore
