Whenever I say I wish we had a Panera bakery here people ask "why?" and I say "because they have good bread" and they usually reply with "Wal-Mart sells bread...."

Looked more like a wrap than an actual bag.

I meant something that automatically fully encloses the bread when it is dispensed. Anything less looks unsanitary.

As I said, I cannot trust the chute to be fully clean all the time, so if the bread contacts it naked.... Let's just say I don't follow the 5s rule.

I did watch /watch?v=vlAz00LgHMk, and I have a clear image of how the baguette is handled.

But they should add an automatic system for bagging the baguette, for hygiene.

It is sad to see "real" bakeries disappearing in France. They all seem to be modern and look the same now, and much of the bread is made from prepared dough delivered in trucks. We make an effort to buy only from a local artisan who has 8 local employees. Without the angry old mother to order us around and berate us for not having exact change, it just wouldn't be the same. Our Communist city outside Paris helped them to not lose their lease -- we all own a piece of it now!
