I had to love my daddy when as a wedding gift he bought me a set of the most high quality folded steel Sushi Knives available in japan. The set was around 7,000. I love those knives very much.
The canoe shaped grease traps that come with a George Foreman grill make good trays to keep your sashimi knife in water with just a little modification to hold the knife, just in case you have a GF grill still in the box that you have never used out in your storage building.

Ever seen that tom hanks movie where he was shipwrecked? He skewered a crab with a stick and when he took the stick out the guts of the crab spilled out. Crabs are pretty much liquid until cooked.
You can absolutely eat raw crab and lobster, it's another form of sushi that the japanese eat as well, along with raw shrimp. The trick is, like raw fish, it has to be fresh as the older it gets the more likely you are to get sick from eatting it.
@Maeryck They ever eat raw chicken and horse in some, more high-end and neuvo Japanese restaurants. If any meat is fresh and kept in good condition, it can be eaten raw.
Alton uses super thin flexi cutting boards made out of plastic. I think he's using it as a precaution anyway, even though he's okay with cutting raw fish on his wooden one. You can never be too careful.
you want to squeez it kinda tight so when you cut it it doesnt open up like his did. and the you want to try to cut it when at least 2 or 3 motions with your knife, not so much a saw motion. and you get the knife wet so it doesnt stick to the rice not the nori.
sushi is quite popular in north mexico, actually its mostly the california roll with a (mayo+heavy cream +chipotle adobo) sauce. This thing is actually more popular than tacos now days O_o

Imitation crab I don't think needs to be cooked, but it does need to be thawed I believe. If you wanna use real crab, then cooked yes lol
