Funny thing, the amount you use doesn't really matter since it all evaporates! You just want to use enough to freeze the other ingredients. Use as much as you need to get a nice firm, frozen texture, and make sure all the pieces have evaporated (sublimated, if you want to get technical about it) out.

@ronwass No, not dangerous what so ever. You would not worry about burning your mouth when something has been deep fried right? It would have cooled down considerably by the time you eat it. Same for the cold stuff. The small parts will have 'heated' up and gone back to carbon dioxide gas when you are done making this.

And if you'd have a piece in your mouth the freeze-burn would be similar to a hot burn. Nasty but not really dangerous.
