  • @MrbeijingJack..To answer your question, Yes the remaining dough can be covered in plastic and pulled within a few hours. however, before pulling the noodles you have to work the dough first aligning the gluten strands and raising the temperature of the dough. If you up the quantity of baking soda in the recipe then the gluten in the dough stays "broken" for a longer period of time allowing you to pull noodles without working the dough too much. I personally don't like too much baking soda..

  • KP.....I am "hopeful" after watching your video....to be fair I"ve tried the "I've got two balls" dude hand pulled noodles recipe...ALL of the comments said they could not do it. I lived in China and now am a self-taught Chinese cuisine cook--the ONLY thing I need to know is this because I believe noodle dishes ROCK but one must have good noodles. One question...the remaining dough--can it be covered with plastic and pulled within a few hours? THANKS!
