  • Total, TOTAL overkill.

    Good Hummus doesn't need mire lemons or any of that other pretentious crap. It needs a high tahini ratio (i.e. lots of fat), basic seasoning and you need to let the chickpea and sesame flavors shine through. If anything, use a touch of normal lemon juice. The consistency needs to be smooth and creamy.

    What you made isn't hummus, it's flavored chickpea dip.

  • sorry but with all do respect you can't make it from canned garbanzo beans. It has to be made with dried beans soaked overnight then cooked in a pot of boiling water. Try it and you'll taste the difference. Canned tastes like crap!

  • Why don't chefs use a citrus juicer? Everybody on youtube is pressing lemons by hand (and wasting a lot of juice from the inefficient squeeze).

  • Why use canned chickpeas, its much nicer when you use fresh let them soak one night with the garlic cloves, then boil them for up to 2 hours in a tasty stock, (chicken or vegetable, even cubes do) the taste is the difference between heaven and hell.

  • Ive watched a ton of your recipes and have made several, and i really like them. 1 observation though I gotta say.. you use waaaay too much olive oil in everything! lol Although Xvirg olive oil is a healthy kind of fat, moderation is the key in everything, and you really do not need near as much as you use. Other then that though I love your recipes, thanks. =)

  • with bread, arabic bread. u make a roll and just eat together from the plate. many people eat hummus with meat rolled in bread. thats really the best dip u can get.

  • ross144 buy fresh chick peas leave them overnight night cover in water with a tiny bit of baking soda (so it will soften the skin and would help reduce the cooking time) Next day rinse your chick peas, grab a pot place your peas in it add enough water to cover and cook until peas are soft but not mushy. Now this is critical get the peas out the pot place them in your refrigerator until they are cold (very important)

  • hahah! i've yet to try it since my mother refuses to buy a food processor=( i once soaked my chickpeas too long and tried to steam it an it got all stinky. do you know how to make salted steamed chickpeas? it's called kachang puteh.

  • @cheriness8 While keith does have a good point, I am loving this stuff too, thanks for the helpful video... I was told the same thing by an insistant greek friend that is was as per IPA symbols [humus] or "hoo mouse." He did pronounce the h, but it some language it could be silent. All that aside, things are pronouced differently in different languages, Sauna is a finnish word and invention but we pronounce it as if it were an english word, Examples are endless.

  • most likely you'll find in a special store like whole foods..however you can mimic the flavor by adding a little orange juice to standard lemon juice, 90 lemon, 10 percent orange

  • I have read that the Garbanzo beans be should 'skinned' also. I cannot find a quick way of doing this so I tend to avoid making my Humus now.

  • Sub in real unsweetend fresh peanut butter if you are allergic to sesame.

  • I make my hummus without tahini and it is very good. I have only tried hummus with tahini once and it was delicious and it had more flavor. But all you would have to do is add some extra spices.

  • you can make it without it.  it's not an absolutely necessary ingredient.

  • Hi there; if you're allergic to sesame seed, then you should really try it with ORGANIC peanut butter. You'll be suprised how the flavour is similiar. Hope you're not allergic....enjoy.
