@spunkster101 It really is that simple, although if you have never done this before, it may not come out perfect the first time, but it really is easy to do.
Absolutely nothing wrong with your method, I clean my walleye just like I clean my smallmouth bass. I have several very large fillet knifes (10" and 12" blades, available at most sporting good stores for around 20 dollars) and cut from behind the head to the tail right through the ribs producing two "slabs" or sides. I then slice the ribcage off the fillet, remove the pin bones, knock the hides off and cook 'em up! When cleaning a lot of fish it goes rather quickly and hardly wastes any meat!
thanks for the tip on the cheeks, I've heard of it and every time I've tried to remove them I hack them to pieces and end up throwing them out. This will sure work better

may i suggest if your going to keep walleye use a pair of kitchen shears and right under the head where the belly comes to a "V" under the gills put your shears in there and snip that main blood vessel after doing this put the fish head first into a half full 5 gallon bucket of water and let the walleye thrash around until it stops moving. this will ensure u have nice clean fillets and none of that bloody mess while cleaning your fish.

The best part of the fish are the skin and the eyeballs followed by the liver/roe. Cheek and meat around the head comes 4th and then lastly the fillets. The bones are only good for stocks. The gills are inedible. 99% of people are very prejudiced and biased with underdeveloped and unrefined tasted buds. Most of us here only know a fish by the fillets. Sad.

@Bmw0524 Yes.....you can fillet a bass the exact same way, except you do not remove the checks on a bass. We have a video as well on how to clean a bass and you may find it interesting.
Once again a great video, thanks! Do you prefer not to remove the pin bones down the lateral line? Or is a walleye of that size not big enough? I tend to cut them out regardless of size, I know they breakdown/dissolve in hot oil but I don't take the chance.
