  • Out of all the recipes I've tried, this is the yummiest!!! :) My grandma made this all the time, and I never took the time to learn!!! I'm going to make it all the time! Loved the way you made it so easy and fun to follow the recipe. Can't wait to prepare it myself!!! :)

    hi there! all spice is a blend of spices you can buy all together. it is a combination of equal parts of cinnamon, cloves, nutmeg, and black pepper. it's a dark ground and fine powdery spice blend. you can buy it from specialty stores. being that you're in india, you should not have difficulty finding it. good luck and please keep me updated!

    Even though its name suggests a mixture of spices, allspice is a single berry from the Jamaican bayberry tree.

  • Saga update, everything was delicious, and everyone loved it. It was the first time my mom had kibbeh. The yogurt and cuke salad was perfect with the kibbeh, will never make it without again. I found the coarse bulgur harder to work with, but the taste was still fantastic. Of course the hummus and tabouleh were great. You were a big help, thanks again, Sandra

    i agree, it tastes just as yummy, but the coarse bulgur is a bit harder to work with.

    i never make kibbeh without the yogurt salad, i dip the balls right in! YUMMY!!!!

  • Saga, Oh thank goodness, I was so afraid that my kibbeh would be ruined. I'm going to try something new and use the food processor to make the kibbeh, onion, and spices into a paste like dough, then add the bulgur to bring it together. I have always made it by hand before, so we will see. I really appreciate your help with this. Thank you so much for your time during this busy holiday season.   • Hey Saga, Well I've made the kibbeh both ways, and like them both, but my favorite is the little footballs. So glad you mentioned your yogurt, cucumber, mint salad. Got everything to make it. BUT I have a problem :(, when my bulgur came today, they sent the coarse wheat instead of the fine. PLEASE tell me I can still make my Kibbeh with it. There is no fine wheat that I can buy here, so this is all I have to use. Thanks so, Sandra DeSano

    hi sandra!

    well, if the bulgur is #1 or #2 you're fine but it's the coarse #4 the kibbeh will need more meat per bulgur ratio, depending on your recipe.

    also, it'll be more doughy which is not a bad thing, and goes GREAT with the yogurt salad you're making alongside!

    go for it and enjoy your cooking, you should be fine!

  • I have now found an online source for the bulgur, hurray! I love the Kibbeh, but was anxious to expand my Arabic repetoire to include more dishes. Happily I found your site, and will be making my Kibbeh, and your Tabouleh, and your Hummus for Christmas Eve. Yes, there other nice sites showing Arabic food recipes, but none have your flair, and your end product, in my opinion, outshines these everytime. I esp. love your plating of your foods, very elegant. I would love to watch you make Kibbeh.

  • Thanks for the personal touch in your answers. No I am not Arabic, my daughter lovingly refers to me as a "ginger" with my auburn hair and fair skin :). Between dating and marriage, I was in a large Italian family for 20 yrs, and my ex's aunt was Lebonese. This was my first introduction to middleastern food, and it was delicious. I was fortunate to get a wonderful kibbeh recipe, and have made it many times over the years, but after moving from MI to TN, no fine bulgur anywhere.

  • Looks wonderful, but 2 questions. How much bulgar do you use, and how long do you let it set to puff up. I want to make this for Christmas Eve, and need to know. Thanks

    hi there!

    thanks for watching and to answer your questions, which i love to read:

    1. i used 1 full cup of dry #1 or #2 bulghur

    2. i leave it soaked with the lemon juice and olive oil for 15-20 minutes and fluff it up with a fork after 10 minutes.

    this is such a festive looking salad to have on your table over the holiday's!

    the green of the chopped parsley and red tomatoes, YUM!

    please let me know how it turns out!

    yes the bulghur is uncooked. the liquid of the lemon juice and olive oil give it the softening factor and makes it tastes so good.
