  • i dont take the shank off my leg and just butterfly the whole thing. it is a bitch around the knee or what ever it is called but i get a huge roast that way

  • sharpen your steel like that .one day the steel will slip and tou will put the knife through your forearm

  • pshows70 you are a fucking idiot! The butcher is holding his knife THE WAY ANY BUTCHER ON THE PLANET HOLDS HIS KNIFE WHEN HE IS BONING OUT!!!!!!!! Read a fucking book before you make your self look like a fucking fool when you run your mouth.

  • why are you holding the knife like you are stabbing something?

  • to all the people who are slagging this guy off--Where's is

    YOUR video?!

  • very poor butchery skills displayed, an embarassment to true skilled butchers everywhere

  • lmao im a butcher everyone does it different the important thing is to keep the face of the joint

  • thats my neighbour!

  • ist das der metzger oder der lehrling?

  • This guy obviously read this stuff in a book. Im a butcher and in my shop if you left that much meat on the bone or held your knife in such a reckless fashion you wouldnt have a job.

  • yeah. may have been a bit nervous with the filming and distracted by the conversation but there was a lot of meat on those bones. Looked like a young lamb but didn't even attempt to trim any of the fell off before he tied it. Sloppy.

  • i agree im a butcher from Australia and lamb is our special skill.

Dexter Russel is the way to go for boning knifes in my opion

  • i agree also in the shops i have worked in

we wouldnt use that method either

i wouldnt cut throught the joint i would attempt t get the bone out without opening the joint therefore when you roll u keep the face full

  • Hi there, me again. I DID IT!! using your method I deboned a lambleg. Now, I just wanted to ask you something about the bone. Is it ok to feed it to my dog raw? thanks.

  • Hi...yes you can, all bones should be raw for your dog. Never cooked ones. even a raw chicken leg or backs are good.

  • this was very interesting, by carefully watching this video I probably saved myself a trip to the emergency room...as I probably would have injured myself trying to do this on my own.
