@neetabhandarkar she is using a lot of oil which creates a barrier between the food and the metal. ALL stainless steel pots stick to food unless you apply a lot of grease/oil. teflon-based pans are best for non-stick, easy clean up, which is what i use
you say the oil is on medium-high, but it looks so controlled. i initially have it on medium-low and it becomes dangerous as soon as any liquid touches the oil. it also dries up way too quickly and the spices and cumin seeds start to burn.

@Lasantamuerte2010 You can also make gram flour yourself. You just take your dry chickpeas, wash them, then roast them on the stove for a few minutes. I crushed mine a bit with a mortar and pestle so some of the pieces would split, then put them in my smoothie maker/food processor/blender. Its so easy. First time i ever made it & it came out great!!

Manjulaji, I think u r based abroad. we in India use Kabuli chana and boil them with a tea bag in pressure cooker. In the water, we add crushed Garlic. Reserve the chana in water for half hour so that chana becomes blackish. Rest of the recipe is more or less the same. However we add in tempering ajwain and later ajwain powder as well. To finish, I normally add fried green chillies and a little clarified butter.
Woah! The oil! I work in a Chinese restaurant and Indians like their food oily. Its too much for me. I do questions: how come they always want all the ingredients chopped so small? How come they always eat soup? Alot of Indians won't eat eggs either. They like heavy, oily sauces and do not like sweet dishes. Or maybe I'm just dealing with specific Indians? For everyone wondering about the besan, it helps if you make this recipe using dried chickpeas so you can set aside some to grind in a coffee/spice grinder to make your own. The flour cooks in the oil and renders the enzymes in the raw bean digestible and saves you a trip to a specialty grocery store. Just a tip! This is one of my favorite recipes.

I made this recipe tonight using half the salt and adding chopped spinach and nutritional yeast. It was great! To go with it, I made brown basmati rice, onion nan and a pot of spiced tea. It was as good as going to an Indian restaurant, only healthier. Thanks for posting it!

I've read that Hing is used more predominantly in Pulse dishes such as this as it helps to stop flatulence. As far as actual taste - i'm not sure although it does have a distinct smell so it must add something to the taste also. x.
Manjula Ji: The recipe was fantastic. I cooked for the first time in ten years today. I made this and a couple of Toor Daals based on your recipes for my wife and son who are returning from India tomorrow. I want to surprise them with my cooking ability. The channa came out really fantastic. I could not find the Besan - so my gravy did not have the thickness it needs, but other than that everything was great. I also added some fresh tomatoes and onions to the recipe. Thanks again.
Besan (Gram Flour) is for thickening the sauce. Pressing some of the peas also helps in some way to thicken the sauce. It also adds a subtle flavor to the sauce.

I don't have Besan (chickpea flour) so I'm going to try replacing that with wheat flour. I'm hoping that will be ok since I have all the other ingredients.
Add one or two more green chile's and some additional red chili pepper. BE REAL careful though, too much spicy food can burn the mouth and lead to diarrhea and even anal fissures. Use discretion.
My friend and I have cooked Chana Masala at our house but we seem to be lacking some flavour.
We use MDH "Chana Masala" spice mix as a shortcut but apart from tomato, onion, salt and oil we do not add any other spice. There is no real evident spice to our food. Is there something we are missing?

I always use onions in most of my dishes. I though the same as you before I tried this recipe with besan. I actually really liked the nutty flavor of the besan in the gravy. Great recipe!
She is a Jain and thats why dsnt use onion/garlic etc, I believe. I am sure it tastes really good without onion too since we make it without onion during navratra. u can add onions if you want. dependes on one's taste and prefernces..

I not sure what Indian food you thinking of, but 3 tblspns of oil for a dish to serve 4 is really not that much. Most Western food is oilier.
Chinese use sesame oil also, so not sure what part of India you are thinking of friend :)

u can soak it into water for 2-3 hours before cooking to make it more soft.

Hi, Ur recipies are really nice. I never used besan in choley masala instead i used 1 mashed boiled potato to thikan the gravy!!!!

I've read that Hing is used more predominantly in Pulse dishes such as this as it helps to stop flatulence. As far as actual taste - i'm not sure although it does have a distinct smell so it must add something to the taste also. x.

Manjula Ji: The recipe was fantastic. I cooked for the first time in ten years today. I made this and a couple of Toor Daals based on your recipes for my wife and son who are returning from India tomorrow. I want to surprise them with my cooking ability. The channa came out really fantastic. I could not find the Besan - so my gravy did not have the thickness it needs, but other than that everything was great. I also added some fresh tomatoes and onions to the recipe. Thanks again.

hing smells nowhere like onion-garlic paste, and it certainly does not "stink" i think pungent would be the more apt word.

Besan (Gram Flour) is for thickening the sauce. Pressing some of the peas also helps in some way to thicken the sauce. It also adds a subtle flavor to the sauce.

I don't have Besan (chickpea flour) so I'm going to try replacing that with wheat flour. I'm hoping that will be ok since I have all the other ingredients.

Add one or two more green chile's and some additional red chili pepper. BE REAL careful though, too much spicy food can burn the mouth and lead to diarrhea and even anal fissures. Use discretion.

Hello Manjula.
My friend and I have cooked Chana Masala at our house but we seem to be lacking some flavour.
We use MDH "Chana Masala" spice mix as a shortcut but apart from tomato, onion, salt and oil we do not add any other spice. There is no real evident spice to our food. Is there something we are missing?

I always use onions in most of my dishes. I though the same as you before I tried this recipe with besan. I actually really liked the nutty flavor of the besan in the gravy. Great recipe!

She is a Jain and thats why dsnt use onion/garlic etc, I believe. I am sure it tastes really good without onion too since we make it without onion during navratra. u can add onions if you want. dependes on one's taste and prefernces..
