I am lucky enough to have eaten at Chez Panisse almost a hundred times over the past 25 years. Each meal was perfectly cooked from amazing ingredients; I remember many of them vividly, though they were served years ago. Chez Panisse is the only restaurant I know that never has a bad day--and that constantly strives to outdo itself.

I HATE that I've seen a comment from you on every single one of the videos I've watched of Alice Waters. It's not like she's trying to change the health of the nation for the better or anything which makes you look like a complete tool. So congratulations, you have no life. Alice Waters is insane. When people question her about how her local, seasonal approach works outside california in the wintery midwest, her response is that those people should grow their own food in hoop houses and greenhouses.

Its not really a good solution either.

The food grown in such circumstances couldn't support all those who live in those areas.

And, of course, not everybody has the money lying around to build their own private greenhouse adjacent to their home.

Maybe, that's why she's been so loudly cheering on higher grocery prices even as people struggle to pay their food bills.
