One exceptional, special girl. Please keep that valve and ask the guy from gas company to install it. The installation is free. All he needed is to have that part. Otherwise he would have had to sell his part and that is what would have made the whole thing be expensive.
I must have done that 100 times! Luckily ours has an igniter button so we don't have to deal with open flame. My husband says we need a new part, and what javadude said sounds familiar.
A newer water may use less gas because it may not have a pilot light that runs all the time and would probably have better insulation. If your water heater is cutting off you might have a problem with the thermocouple.
The thermocouple is what has to heat up before you release the button on the pilot light. It only allows gas to enter the system when it's hot. If it's defective it will shut off the flow of gas. Definitely get that checked out.

This is absolutely something a trained professional should mess with. Too dangerous if anything goes wrong. I suggest asking the person who comes out about your options regarding replacing the heater. Water heaters have a finite lifespan, like most things, and replacing a worn out one can be safer and more cost efficient.
And a new one may not have a pilot light! Many new ones use a piezoelectric spark instead.

You should always use matches when lighting a pilot, i work in the trade
and a guy i work with had his lighter explode in his hand while lighting a
residential water heater just like that.

When all else fails... read the directions!
