the hand signal thing, i think, is a way of signifying if that take is good enough to finish on, as the editor of the clip will have to look through hours of footage, they can just fast forward through all the footy, and whenever they see the hand signal, they know that, that take was a clean one. just makes things easier. you dont see it on videos because they are edited out, obviously. hope that helps.
