Boiling small amount of water in the open barrel produce water vapor, i.e. the liquid transforms to gas that his volume is much higher than the liquid.
Closing the barrel and cooling it transform back the gas to liquid. Because the reduction in the volume, the inner pressure drops down and the atmospheric pressure crushes the barrel.
