If the plane is full, and maby today it has some extra luggage to take, nd its going to sydney etc, it will need more fuel as well, thus increasing the weight, nd the runways at heathrow arnt really that long, so instead of setting flaps to 10, maby he set it to 20 etc? but im not sure if its full
It's probably not same on all Airbus, but for A320, i think it is: Flaps 1 is only slats 18 degrees, Flaps 1+F - slats 18/flaps 15, Flaps 2 - slats 22/flaps 20, Flaps 3 - slats 22/flaps 26 and Flaps FULL - slats 27/flaps 35.
And btw, it's not a requirement that they will always takeoff with flaps at least 10. Takeoff's are performed with flaps 5 and 15 also. It all depends on runway length, airport elevation, aircraft weight...

aircraft always take off with their flaps down at different possitions depending on the length of the runway, the weight of the aircraft and weather!

Yeah. Most aircraft take off with their flaps down part of the way. Without the flaps, it would take a lot more runway to get airborne.
