You'd be correct outside of the US, where the term cider is used to mean what we call "hard cider". However, the American term "cider" refers to soft cider from freshly pressed apples. The same beverage can be left to ferment to create hard cider, and if left longer it goes to apple cider vinegar. Wikipedia has a decent article about it.
It's just apple juice. If you put it in jars and leave it out of refrigeration, it will eventually go to hard cider, which is about like beer. After that, if you freeze it, and drain off the alcohol out of the ice, you then have apple jack, which is like liquor. I really don't know the proper techniques for all of this - if you just let nature take its course, tho, you will get alcohol. Me, I prefer it as fresh juice.

you need to add yeast to the apple juice for it to become cider this is just apple juice still a ok video
