Looks great....I'll give it a try. I think you could do that La Caja China style and not need an electric oven. I'm not Cuban but if it works for me....I'll use it.
I love cast iron also and have pans. I do have the cast iron pizza pan but found it takes long to heat up putting it in the hot oven cold. I found by heating it empty and adding the pizza already made up into the hot pan, it comes out better. I just made one today. Putting it cold in a hot oven, the dough didn't bake as well.
I actually used Crisco I heated the pan to melt the lard and then used a paper towel to apply a very thin layer it helps to give the crust a nice texture

MMmm, looks really good. Did you oil the pan a bit first ? or flour..??? And what temp do I set the oven at?
