  • Well, I got everything together, and today we are having meatballs.

    While collecting things, I thought Wow! I need to can some of these meatballs in my tomato sauce! I'll be doing this for some time, since we use a lot of sauce, the meatballs will be a huge plus. Since it's almost tomato canning time, I can add them to the sauce jars, and will also CAN SOME MEATBALLS ALONE, RAW PACK, and they will be ready for anything I decide to make with them. I just love new storing ideas. You inspire me

  • You Angel you! I have been looking for a great meatball recipe for months, and yours is WONDERFUL. What's with the ones you find online, yuck. Yours look fantastic, and I can tell by what you used in them, that they are great. This is exactly what I have searched high and low for. I'm even going back to Ragu since I see that new, to me, flavor of Ragu. Thanks for the tip on the parchment too. Bless you.

  • Oh forget Rachel Ray -- I think you have her beat all to pieces Noreen. Now you know I'm wondering to myself if I can can those meatballs after roasting them in the oven . . I bet one could!. . . : ) You get that pressure canner out and you go girl. You'll be tickled pink with that home-canned meat ready to go in your extended pantry.

  • Noreen, You did it again...those were theeeeee best meatballs I have ever made (or eaten)! I used Bob Evans Italian suasage(in the roll form) and Beef. Yummy! Even my daughter, who is a picky eater, loved them too! Keeper recipe...Thank you and keep them coming. My family is very happy.

  • Noreen - I'm gonna jump in here if you don't mind for all the folks who are asking questions about the vitamin C. It's a dough conditioner. It's just one of the acids you can use. Most people don't have ascorbic acid but most do have vinegar. You use it at the rate of a teaspoon of vinegar for each teaspoon of yeast called for in your reciepe. If the recipe calls for 2 teaspoons of yeast, then you use 2 teaspoons of vinegar. You can also crush a vitamin C tablet too! Happy baking!

    I bought a new pressure canner too, and found a used (brand new) stainless propane setup like my hillbilly/canner/survival perfesser of hillbilly-ology....the great Ironhead !

  • Thanks for the tip about the pre cut parchment sheets at Sam's. We retired from our resturant but kept the half sheet pans as things brown much better in them because of the low sides...now I will have those parchment sheets to make things easier. Nice Dish too!

  • 624787John: I am sorry, I must have mis spoken. I got the half sheet pans at Sams. The parchment I get in bulk off of ebay. Look for this store: the-baking-queen. Just like that with the dashes and all. She has parchment sheets really cheap. You can get 100, 200, 500 or 1000 sheets from her. 200 sheets costs 19.95. She also has sheets for a full sheet pan. I use about 200 sheets a year. Sorry for the confusion, Hope this helps! Noreen
