Awful to watch his filleting. I'm filleting fish as a job and I never seen that kind of filleting except in here youtube. A fishhead is only place to keep fish well in line when you filleting the fish, any fish. I do that filleting under 20 seconds and my fillets has not fish fins. Never touch the fish at your knivehand, because it get slimy and also your knive! Pin boning was ok. (Sorry my bad english).
