    i also have a few question. 1-i am trying to can sheep tongue and feet also caw feet and tongue but I like to cook it fully for 5 hours(slow cook) , once cooking has done do I have to use 10 pound of pressure or 15 and for how long?

    2-do I have to wash all my cans as it comes from factory and I am planning to do 1000 cans I was told by factory that it has to layer of costing on it so dose it has to be sterilized?

    3-meat with bone can be used for canning.thanks

  • can meals like these be canned in a regular canning pot or do they have to be done in a pressure cooker canning pot?

  • @NailsByAngelina if they contain meats they need to be a pressure cooker, water baths are good for high acid canning such as tomato sauces, salsa, jams and jellies.

  • This is an awesome video! Canning complete meals is far more nutritionally sound than just opening a can of green beans. If you were to make to a meal out of cans of individual food you would more than likely have leftovers that you might not be able to preserve in a SHTF situation. Canned good last a couple of years on the shelf. If you want something more long term as well, you can get slow dehydrated complete meals ,flushed with co2 and in mylar from 4longevity.myefoods.com Happy Prepping!

  • ok, guess i spoke to soon. :D my bad. i was not aware that altitude made such a difference in how long/what temp/ pressure to cook this. you just never really think of these things if you've lived somewhere for years. i will be checking your website out. pressure cookers have always scared me a bit, but in this day and age? i think canning is the healthiest way to go. buy in season cheap/grow it & can it. TY! and my apologies if i was rude in my previous comment.

  • @rodbo i wholeheartedly agree. my daughter and son were cooking full meals for the family by the time they were 9 yrs old & i don't mean microwaved crap!! we don't even own a microwave! i mean cook from scratch! they know how to clean, sew, &  hunt. canning is next on my "to teach them" list!! people just don't realize how close to the caves we are. we're to distracted with our coll tech gadgets & what not. IF i could afford it i would be canning food by next week!!

  • Does anyone know the answer to this question: The altitude may add one minute to your processing time. Does a minute really make much difference considering that you are already letting it sit until the pressure comes down? In addition, you must tinker with the temp to get it just right which ultimately you windup exceeding the rec. pressure anyhow which really should lessen the cook time as this increases temp. Also, if you cook it to where it's ready to eat, doesn't canning over cook it?

  • @emerson24 Its not the time that is affected by altitude, its the pressure. You add 1 lb of pressure for every thousand feet above sea level. Many foods do not have to be cooked all the way through before you can. For instance...I have 4 chickens (freshly butchered from the backyard) in a pot ready for canning. I cooked it about 2/3rds of the way through. It will finish cooking in the canner. Im at close to 1700 feet in elevation so Ill cook my chickens for 1 and a half hours at 11 lbs. Cheers!

  • My sister gave me a jar of canned chicken curry and the flavor which is normally very flavorful came out VERY bland. Is this normal for canned foods to lose some of the flavor? Or is it because she didn't use enought spices?

  • Why not use your pressure canner to cook the stew and reduce your cooking time 3 fold, it infuses the flavor as well and makes the meat tender,

    You can also sterilise your jar and lids i the pressure canner/cooker.

  • Its a real nice video!! Good job on the both of you. But I didnt see any answers on how long can you store these cans. Whats the "best before" date that you can put from the time you made it.

  • Canned food can last for up to 3 years if properly stored. Store your canned foods in a cool,dark,dry place. Sunlight/light will cut down on how long your canned foods will last. Check your stored canned food monthly. I cover my canned foods with thin baby blankets in the closets of my house. Then if I open the door, no light gets to the food. I have eaten canned peaches that my mom made that were 5 years old, and they were fantastic.

  • You can can vegetables, etc. that are very acidic (like tomatos, among others) by just boiling the cans. Stuff that is less acidic and more basic generally needs to be pressure canned

  • I would imagine you can, but you still have to pressure cook it, just make shure the vacuum material is AUTOCLAVEABLE so it can take the temps in the pressure cooker.

  • Its called southwestern chili. Chunks of beef...Whole red peppers if you like. There is no rule on what kinda meat you have to use.

  • I'm impressed with their enthusiasm and skill, but chili without mole, cocoa or chocolate? No cilantro? I'm also a fan of red wine in chili (the heavier the better).

    Although I'm a Texan, I'm okay with beans in chili, but forgoing the cilantro...or even some actual chilies (chili powder's okay, but...), well, I'm not sure.

    Still, this is really informative. I can do this at home!
