Can someone explain to me how to attack instantly when unflying because whenever I unfly I cant attack until after 1 second of falling.

Unfly is a glitch in the game that make you attack after you stop flying.
First you have to be hit in the air without beeing knocked down, THEN you can do the unfly combos. Be aware that the unfly glitch disappears whenever you normal jump.
Go the the shoryuken forums and to the MVC2 section. It should be a thread there somewhere about unfly.
