  • My dad was last in a long line of bakers going back to about 1850 and this is exactly how he cleaned his ovens.

  • To scuffle. infinitive. To mop a gigantic oven.

  • I've got a German Haussler wood-fired oven here in Eastern Europe. They insist that their bricks must not be scuffled claiming that the bricks can be damaged. Haussler insists that the remaining ash should be removed by wire brush only, but this is too time consuming and the front section of the oven loses too much heat. VERY FRUSTRATING! Anyone out there with some opinions on this? I'd love to hear from you!

  • @jimhaas3 - I would have thought that a wire brush would be more likely to damage the bricks, rather than the wet cloth of the scuffle.
