You're right, 20 years ago you had to get Mountain House meals at the backpacking store at about $7.00 each, but now you can go to the grocery store and get a ton of stuff that is "heat and eat" I love the Pasta Sides (and "Rice Sides") you show, re-packed into ziplocs to avoid the weight and waste disposal of the foil pouches they come in. If you have a food dehydrator you can take almost anything you have at your regular kitchen table--spaghetti, stroganoff, and lasagne are my favorites
I'm going to add some Clifbars and Pasta Sides to my pack for a backpacking trip next weekend, thanks for the ideas.

Little advice from a skinny guy..
If you don't want to keep gaining weight, try to manage your calories intake in the opposite way, more in the morning, and less in the evening.
