One question - what is the advantage of adding the turmeric later in the recipe? I was always told to add the turmeric at the beginning, with the onions, so it can fry a little bit in the oil.. Thanks for the great video!
@pergatron : Sorry for the late reply! The turmeric needs to be cooked in the Oil and we did add it to to the oil. The onions are cooked for a while and if the spices are added before, the chances of them burning are higher. Hence, the turmeric is add just before the rest of the liquids are added in the recipe. Hope that helps.

The milk adds the creaminess but you could leave it out if you prefer. Instead of adding paneer, maybe you can substitute the chicken with paneer. Chicken plus paneer in one dish may be too much :).

Also, i think will skip the milk n ginger julienne bit in the recipe...just my personal preference :)

I swear to god I made this dish exactly as demonstrated and invited relatives. I've never been so embarrassed the dish was horrible. The carnation milk horrible, the Ginger cut in julienne supposed to put in at the end when u get a piece in the mouth makes u want to puke. To many different spices to much masala tasted horrible. Please don't try waste of time and money.

@divya12002 : We suggest that you do everything as the recipe says (but in the Pressure Cooker) add the chicken and add a little extra water, enough to cook the chicken. Pressure cook, open and then carry on the process. Cooking Chicken separately and adding to the gravy will not be the same....and your chicken will not have the flavor from the gravy.

@sameer84ca highly disagree... the recipe is very clear that the evaporated milk is highly optional and you could use cream if you wanted... and per your taste! besides that, there's absolutely nothing in this version of kadai chicken that is "foreign" to mughlai cuisine... most of the steps are fundamentals to indian meat (or even vegetable) recipes, including the ingredients: nothing out of the ordinary. whoever you are, sameera, just messed up your own cooking and are pissed!
Damn, I am sure it will be entirely gives "Tomato" Aroma. According to sources its not original "Kadai Chicken". Any then its your own recipe. But dont use and confuse the people with reputed dish names.

it was different version of chicken kadhai i have always known and cooked.the version i know and have cooked involves lots of tomatoes no onion and no milk or cream either. Something new and different is always good,i will surely try this recipe.
Oil has a higher smoking point so it will not burn as fast as butter will when doing the seasoning, especially recipes that use mustard seeds, cumin seeds, etc. Also, we use canola oil. It is a healthier option than the saturated fat from butter or margarine.
I know you mentioned the milk/cream also helps the chicken retain its moisture, would it mess up the dish too much if I browned the chicken a little bit before adding it to the rest? I have this thing about boiled chicken texture....I just wonder if the browned texture of the meat would mess up the flavor of the dish.
I like the look of this one... I'll probably try something similar, but I'll definitely go with cream instead :-). Life is too short to not eat cream!

I finally tried it, with some adjustments because of the milk. I had all of the ingredients, since we have many Indian stores in town.

Oil is used in nearly all of your videos. Could I use margarine or butter instead, or will that ruin the cooking process. Thanks in advance.

I'd never add cream or milk, because not only are my husband and I unable to digest most dairy, I don't like the flavor. Probably I'd add more puree.
But everything else about the recipe looks absolutely scrumptious. I love that you guys put the green pepper in last so that it still has some crunch.
This is one I'm going to make soon. I was hungry just watching it!
