    when you don't have wood chips or aluminum foil, you can: 1) make your own wood chips with the shavings of the wood with your knife. 2) no foil? try to find a decent, flat piece of wood to use as a lid and seal the surrounding bottom of the 'lid' around your pot or container with mud. this will lock in the moisture. after your cooking time is done, tap lightly on top of the 'lid' and the mud will fall off.... and

    I got a thin tray that i'm going to smoke some chicken or pork, can i use oak sawdust? what dimension should the sawdust be? like corn flower? thx

  • Hi, the size of Wood chips, you can compare with dill seasoning, much like a little coarse sawdust, you do not use lightly powdered sawdust.

    It is most common to use wood chips from birch or oak.

    When heated, most of the wood chips should be black, unless this happens, the heat is too low and you will not get enough smoke flavor.

    This method is most suitable for smoking of fish, I have not tried to smoke meat, But you are free to experiment, of course.

  • Thanks (-: I have used oak chips in from ABU Garcia. It also works fine with chips from the most deciduous trees. Oak is the most common, birch recommend not.

  • this isnt actually smoked salmon, its hot smoked salmon which means it cooks and gets a smoky flavor at the same time. But the wood used to smoke must be in almost a powder form as you can see in the vid to burn fast enough to smoke flavor the fish....that fish had such nice color too

    I think you can use most kinds of wood chips, but in powder form like you have correctly observed.

    It´s also correct, it´s not a cold smoked salmon, but hot smoked, ready to eat at once, not meant for storing.
