Should I strip the meat out of both sides of the bone or pan fry it one-piece? Or maybe finish in the oven... ?? I dont know! Its a 1lb piece I would say.

Tried this with a fresh jalapeno, onion, garlic and a rosemary sprig from my garden. Turned out excellent! though I had to substitute Goya Adobo for the Lawry's... have to find some Lawry's. Many thanks for posting this.

Yep - but it really depends on the type of beef. I like choice beef with a fair amount of marbling (strains of fat in the meet). It helps make it tender.
