As an aerbatic pilot I have to tell you this is a very basic airshow manuever called a "wing-off". Thepilot pulls a lever which release the wing. To the crowd it looks horrifying. For the pilot is actually not that difficult. My team and I are currently woking on a "double wing-off". I enter a flat spin then detach both wings and land flat a perfect 3-point landing. As soon as I get out of this body cast I'll be performing the manuever again in front of a camera. Watch for the video!
