Adrenaline is released it runs through the blood and saturates the muscles, this causes lactic acid to build up in the muscles due to the stress. Ask any hunter that eats their catches. A deer that's killed in one shot will be less "gamy" than a deer that got a terrified and tried to run before the kill.
