Applying the brakes, while holding the back arrow (and the direction you wish to turn) while jumping rapidly.

I know that sounds like a lot to do, but really holding the brakes just takes over from the accelerator, jumping a lot should be pretty natural by the time you're trying this trick, and holding the back arrow just means readjusting your thumb on the D-Pad.
