  • I think I turned mine into butter :-/ Should have watched this first!

  • Tip 1: It is essential to whip the cream over a bowl of iced water to keep it cold,otherwise the cream will become warm and curdle easily.

    Tip 2: Use fresh(single) whipping cream for this recipe,not long-life variety of whipping cream.

    The whipping cream must also have at least 35% fat.

  • @pinky91 That happened to me on my first attempt and the cream wouldn't reach stiff peaks because the cream was at room temperature (needed to be COLD) so I kept whipping and then - like you said - the lumps of butter formed! But I realised that I had made butter! So I strained the result through a sieve and placed the solid lumps in a bowl, clumped them together put the clump into a plastic bag, into the fridge and it tasted AMAZING! Fresh, Homemade Butter! :D

  • @pinky91 You need:

    - the cream to be cold (straight from the fridge)

    - to whip at a medium-high speed (it's speed 9 for my electric mixer)

    OR

    - Place the cream in a bowl in another bowl of ice (to keep the cream cold)

    - You can use a normal whisk and whisk super speedily for a long, long time

    the cream needs to be COLD for it to form stiff peaks which is the texture of whipped cream and do not overbeat otherwise lots of lumps will form which is the bits of butter

    maybe your cream's separated into butter and buttermilk

  • powdered sugar usually behaves better because it doesn't have to dissolve in the cream.

  • @phamtranh No, that is not milk. It is heavy cream. I use a stand mixer on medium speed for several minutes, then move the bowl into an ice bath and use a hand wisk after adding a pinch of sugar.

  • Some people don't know that real whipping cream is found in cartons in the dairy case of a grocery store, usually in the vicinity of milk, coffee cream, etc.

    At the very beginning I add about a teaspoon of vanilla and instead of sugar I use Splenda to taste as I have two diabetics in my family.

    I always use an electric mixer, whip on medium high for a few minutes, and when it begins to thicken slightly I increase the speed to high until it forms very stiff peaks. Much better than Cool Whip.

  • @fmaria34, no it's not the same thing. You need whipping cream in liquid form.

  • @pinkyy91 Always start low for a few seconds (to avoid splatter) then go very very fast.  You need to be doing this fast or it will not work, or takes twice as long.

  • @pinkyy91 It might be because you overwhipped it, the butter starts to seperate.

  • @pinkyy91 whisking with a slow speed makes it more likely to lump, you want to stay at a medium speed also, instead of adding all the sugar at once, add a little at a time, hope that helps

  • @pinkyy91 You are whipping too much. If you over-whip it will become butter.

  • @pinkyy91 > add sugar at the beggining before starting to mix. When you add sugar, try adding fast until it makes like a small mountain in the cream ( as i told, very fast ) , then you will have good tasted whipping cream, and no lumpy. Also try the fastest speed.
