I'm a Hui living in Toronto,Canada. for those of you saying Huis are simply Chinese Muslims you're wrong. i strongly doubt there were many Han Chinese that converted since the Chinese are very traditional and they got their own stuff to stick with such as Buddhism and Taoism. I have never heard of any Han Chinese that converted to Muslim. Huis are mostly descendants of middle eastern Arabic people including Persians. on my grandma's side her little brother looks at least half Arabic.

Agree. Traditionally, Han Chinese had little appreciation for cultures different from the Middle Kingdom's. They believed in their culture's superiority. So in the past, there were very few Han Chinese converts. But in modern China, more and more Han Chinese persue other religions. Now there are quite a few Han converts but the number is neglectable. They are called Han Muslims. No Huis regard Han Muslims as their own people and Han Muslims still regard them as Hans.
