OMG I just "discovered" you and this recipe today!!! I am now a devoted "Groupie" as the lamb shanks were ABSOLUTELY OUTSTANDINGLY DELICIOUS - thank you so much for this recipe! While they were in the oven braising away, I perused your other recipes. I think next up will be Shrimp and Grits. You and your recipes rock.........
Chef John, awesome flavorful looking dish. I"m gonna try this, but I've seen other recipes that tell you to cut the tendon at the bottom end of the shank (I guess so as the meat cooks and shrinks, it'll roll up the bone?). Is this a necessary step aside from presentation, a la rack of lamb?
i was at culinary school and we had something really wierd happen where some shanks were tough and others wernt. On some shanks one side was tough and the other tender. It was really wierd.
I just finished enjoying these tonight. I did alter the dish slightly by adding potatoes and brussels sprouts to the mix the last hour. This was absolutely delicious. Amazing!
I made this recipe and I added to much rosemary, but it was delicious none the less! Also I added a cucumber raita with that and a light salad....mmmm it was one of the best dinners I've cooked in a long time. Thanks Chef John!
chef im from iraq and we eat this 5 time a week lol we call it kooze i love this cut of meat more than whole leg this kind of meat have the best taste 5 star for the video or no 10 star coz u r the best and u know how to cook
WOW, thank you for inspiring me to make braised lamb shanks! My local friendly WholeFood Market in Pasadena, California has a beautiful butcher department that carries different cuts of lamb, and the beautiful thing is that you don't have to pay a whole paycheck for lamb shanks. I am gonna make them for sure. Thanks again!
Made this tonight and it was fantastic. The sauce is the best thing, the tender lamb a close second. I served it with roast potatoes, broccoli and mange tout. Highly recommended.
i used to make about 40-50 of these every sunday through jan and feb at the pub i worked at, another way tobrown the meat is to roll it in seasoned flour with a bit of salt and pepper for about 4-5 mis then de-glaze the pan with wine and reduce stock and veg. yummy!! gona cook theese tomorrow now!
I have had Rack of Lamb before , BUT I am in Iraq right now and I had Lamb Shank for the first time and Holy Bleepers amazing . I assume it was cooked similar but it was in a Tomato type sauce. WONDERFUL!!! cant wait to get back to the states to try this out ..

Please do a blurb on edible wedding favors. I love your posts so much! I have been constantly urged to make your mothers day flower pot ice cream and your yogurt chicken, that I now call mine.
hey, i really love your recipes. but why are you skimming of the fat? i usually tend to think that with this kind of recipe the fat holds the most taste. especially with meat like lamb. is this just to appeal to health freaks, or is there a real reason for this?
garlic mashed potatoes would go great. If you're feeling adventurous you could look up a recipe for "saffron rice" with parsley and lemon, salt, pepper. very nice either way.
difficult, maybe some grape juice? By the way, i respect your religious reasons. But still a shame that your God forbid you to drink alcohol. If the portions are good then alcohol is truly divine!
You can use beef broth as well to help get some of the same type of flavor in there, and you can get non-alcoholic wines as well, may want to try some of those!
I prefer to eat small land mammals. Preferably while they're still a fetus inside the mothers womb and eating them alive. They are good for the hands when practicing guitar.
@brooksjedi Not only do you kill fruits and vegetables when you pick them, some studies indicate that plants do in fact feel pain and react to it. So picking and eating fruits and vegetables is also torture. It also destroys the habitat for whatever insects and tiny critters that live amongst the fruits and vegetables, so its also bad for the environment.
Dear god! Living requires the pain and death of other living things! I eat vegetables... I am a vegetable killer as well as an animal killer! YES I DO ENJOY IT! btw, most crop plants lack the sophisticated nerve systems to feel anything akin to pain! As well as the memory to understand it! Losing fruits is part of a plant's natural life!
somebody told me I was ok with rape, murder, and all sorts of sadistic acts because I said it was I was ok with the pain an animal goes through for me to eat it.
By her logic since I got enjoyment out of the pain of another animal, since humans are animals that means I would have no problem with rape. Because that's getting joy out of the pain of an animal. I have to explain that she also thinks humans are EXACTLY the same as animals.
it has a verry diferent taste from whatever you tasted before. Clean it really well and take out as much of that "sticky" white skin thingy before you cook it. You'll either hate it or love it lol
Great recipe! and I know you've done a few already, but it's good to see a lamb dish every so often. Such an underrated meat, I'd take it over beef any day.

Chef John browns his lamb in the oven. That takes long. Does the recipe work if you brown your lamb by searing it in the pan?
witt19800 2 months ago
@witt19800 You have to cook lamb shanks for a long time anyway so there's no point in trying to speed it up.
