  • Chef John browns his lamb in the oven. That takes long. Does the recipe work if you brown your lamb by searing it in the pan?

  • @witt19800 You have to cook lamb shanks for a long time anyway so there's no point in trying to speed it up.

  • Lamb shanks are amazing, but they seem to be getting more expensive these days. My butcher charges me £5 each for them (Around $7).

  • Chef John, awesome flavorful looking dish. I"m gonna try this, but I've seen other recipes that tell you to cut the tendon at the bottom end of the shank (I guess so as the meat cooks and shrinks, it'll roll up the bone?). Is this a necessary step aside from presentation, a la rack of lamb?

  • i was at culinary school and we had something really wierd happen where some shanks were tough and others wernt. On some shanks one side was tough and the other tender. It was really wierd.

  • I made this recipe and I added to much rosemary, but it was delicious none the less! Also I added a cucumber raita with that and a light salad....mmmm it was one of the best dinners I've cooked in a long time. Thanks Chef John!

  • Why not sear the shanks in the saucepan instead of putting it in a (too) hot oven? Gives great flavour for the sauce too/

  • WOW, thank you for inspiring me to make braised lamb shanks! My local friendly WholeFood Market in Pasadena, California has a beautiful butcher department that carries different cuts of lamb, and the beautiful thing is that you don't have to pay a whole paycheck for lamb shanks. I am gonna make them for sure. Thanks again!

  • Made this tonight and it was fantastic. The sauce is the best thing, the tender lamb a close second. I served it with roast potatoes, broccoli and mange tout. Highly recommended.

  • i used to make about 40-50 of these every sunday through jan and feb at the pub i worked at, another way tobrown the meat is to roll it in seasoned flour with a bit of salt and pepper for about 4-5 mis then de-glaze the pan with wine and reduce stock and veg. yummy!! gona cook theese tomorrow now!

  • I have had Rack of Lamb before , BUT I am in Iraq right now and I had Lamb Shank for the first time and Holy Bleepers amazing . I assume it was cooked similar but it was in a Tomato type sauce. WONDERFUL!!! cant wait to get back to the states to try this out ..

  • You usually only slow-braise meat on bone, steak might work, but it's a bit of a waste.

  • @ThingsInMyHouse i would choose a tougher cut of steak, since braising makes thjings tender...you dont wnat meat soup when you are done!

    i'm not a big fan of any lamb meat, esp. lamb chops, just don't like the taste....

    but these lamb shanks look so good, maybe i should give it a try...

    could make it for the family and have a steak hidden in the fridge for me ;-)

    don't use coated (nonstick) pans, stainless steel are the ones that rock!

    If you did, then turn up the heat a little more ;-)

    The 'sticking' is called the fond and you should go for that!

  • it's probably too sweet but if you're worried about the alcohol, it evaporates with all the heat :)

  • You might as well use water, because the point of the alcohol is to get flavors that are only alcohol-soluble into the sauce.

  • You can use beef broth as well to help get some of the same type of flavor in there, and you can get non-alcoholic wines as well, may want to try some of those!

  • @brooksjedi Not only do you kill fruits and vegetables when you pick them, some studies indicate that plants do in fact feel pain and react to it. So picking and eating fruits and vegetables is also torture. It also destroys the habitat for whatever insects and tiny critters that live amongst the fruits and vegetables, so its also bad for the environment.

YES I DO ENJOY IT! btw, most crop plants lack the sophisticated nerve systems to feel anything akin to pain! As well as the memory to understand it! Losing fruits is part of a plant's natural life!

  • @Sik15 ummm lambs texture is.... i'd say like duck but you've never had it lol so lets just say deliciousness

  • it has a verry diferent taste from whatever you tasted before. Clean it really well and take out as much of that "sticky" white skin thingy before you cook it. You'll either hate it or love it lol
