@abarnybox your pan needs to be absolutely hot, maybe just before it starts smoking, that way it sears the meat, browning it nicely. The vinegar doesn't add color, or shouldn't, it's the soy and the hot pan(oil/butter in it).

@Manchunia88 to be perfectly honest... in a dish like this the vinegar can be any brand... doesn't have to be particularly expensive and the supermarket own brand stuff works fine. If you're making salad dressings or similar then perhaps a more expensive variety would be more beneficial.
