In most renditions I've seen, Giovanni does not so much as pretend to play the mandolin, rather he just holds it to denote that the audience show imagine him playing. This is actually a more convincing effort. Watch a number of others and you'll see what I mean.

No. "Mele" is written in the score, it is an older italian poetic form.
