A lot of combos are good in theory, but there are a lot of "combos" that only work on inactive characters or CPUs only. It isn't useful to show a video in which the combo is not performed on someone trying to escape it, because that means we don't know if it will work in a real match. It could be that the combo is actually easy to escape.
so what some of them might be escapable. I use peach and if your opponents don't see it coming right from the start of the combo, you can easily overwhelm them, even with escapable combo's, for a regular player would not be able to follow what's happening.

Yep! Her double-jump is very short, if not the shortest, I believe. It can be tricky at times and unhelpful to recovering, but I found it useful in many more new situations. ^^
Her air dodge is the worst too, so that's a bit troublesome against Ike's and such.

But initiating the combos would probably be hard, because it's difficult to drop the turnip, attack and grab it again. It's also hard finding an opportunity to use it.

It took me longer to pick up Snake than MK. MK is easy to get to "good" level with, but I think it's fair to say that mastering him takes longer than mastering Snake. Snake's good and master levels are maybe a bit closer together.
Ill agree with you on the first part but too say that you have mastered someone is still too early to decide you know. To me its too early to say you have mastered someone cuz I know alot of mess with my character (ROB) and each day I practice with him I learn new things, tactics and what not you see, so idk lol but I can see where you were going with that =]
peach may have been downgraded but if you have any knowledge of how to use her she really can kick some ass, she can dish out thousands of percentages in damage. all you have to do is know how to use her.
snake is harder to use, mateknight is a masher, but both require a somewhat adequate knowledge of the game to play and win with.. pits probably the easiest
