Gum paste hardens much firmer and frankly isn't very fun to chew on after it has fully hardened, so i wouldnt recommend eating it though it is edible

I use wilton fondant and then add tylose powder to it which makes it into a quick gumpaste.

They are all sugar dough called fondant which is alot of powdered sugar. I have never heard of using sugar substitute, however it may be possible but I don't know for sure. Most people don't eat the figurines, they are really just decoration so no calories there, thank heavens, lol!! Thanks for your comment!
