  • @Aliza142 i found that when oil is added it makes the pooris soft, not crisp .. and yes, the first ingredient was sooji (also known here as bombay rava, upma rava etc ) cheers ! :-)

    i have followed many of ur recipes, it was a big sucess and all praises from my husband thank u so much for all recipes i have a query i followed the same recipe the pooris puffed up beautifully by after sometimg it turned out to be soggy and not crispy can u please tell me where i went wrong, i made the dough stand 20 minutes

  • @msjasminek its called semolina in english, and it is wheat ground into a granular powder ...:-)

  • @msjasminek in Indian languages it is called Rava or Sooji. Some writers write that it is wheat germ. But it may be just the wheat ground into granular powder as oldernwiser0 says. And wikipedia search on Suji also redirects to their article on Semolina where it agrees with oldernwiser0.

  • so if i use 1 cup of soogie then i need 1/4 cup of meida and 1/4 cup of flour and 1tp of salt right??,i just want it to be just like the puri you would buy in india,i appriciate the help but could you please tell me if this method will work??

  • for one cup of sooji, you take 1/6 cup maida, 1/6 cup flour and salt ( could be 1/2 teaspoon depending upon taste ) .. better still would be to use a table spoon as a measure .. so you take 6 table spoons of sooji, 1 table spoon of maida, and 1 table spoon of flour and 1/2 teaspoon of salt and make a stiff dough.. usually not more than 3 tablespoons of water ...i'm sure this will work ... all the best ! :-)

  • maybe you left it too long after making the dough; if so, try again, preferably by making the pooris as soon as you make the dough.. i had this problem when i kept the dough for standing for more than an hour after mixing .... all the best ! :-)

  • what do you mean by one measure of meida,could you please tell me the specific measures of the soogie,meida,and weat flour??

  • um... in my case a measure is a laddle full, when i make for one person. it could be a 125 ml tea cup if i am making for more number of persons ..and i know many people have their own favourite measuring vessel or cup which they find suitable in their own environment... the important thing is the proportion of each ingredient in the recipe and one could use from a teaspoon to a liter jar as a "measure " so long as the proportions are maintained.. hope this clarifies :-)

  • um ...could be either the dough was left too long before making the pooris, or a little too much maida, or the oil was not hot enough or not cooked till crisp, also you have to leave the poori to cool for a couple of hours in an open vessel before it stays crisp ..i'm sure you'll get it right the next time around ..

    SOJI = semolina

    MAIDA = something resembling cake flower - you can also use all-purpose flour

  • one reason why the poori may not have puffed up is maybe the oil was not hot enough? it has to be really very hot to make it puff up .. maida is only for the purpose of binding the rava, so you can use a bit of wheat flour or even try ( i know it would be a bit difficult ) by using only rava and kneading it sufficiently to develop its binding .. do let me know the results and best of luck ! cheers ! :)

  • Very nice video presentation.. makes it look so easy.. i bought the poori from the indian store yesterday, but it was not very good.. will try your recipe next weekend..

  • ahh...oldernwiser is also observant! mental control does help with the body but i need to get them all back in a line now. working on it by the 'mind' and the doctors now. there may be hope. and ok..i can boil water and reheat frozen foods and make a great 'fake' mini pizza but seriously...watching you do that seemed so easy that i might try it when my arm works again!

  • thank u for this recipee.i made it as shown in video but my puri becomes soft and thick.can u please explain where i made mistake.

  • this could happen if you made the dough very soft, or left the dough for a long time after making it or if the humidity in your area is very high ( rainy days ), or if you did not leave it long enough in open air after making it...i hope you did not add any oil to the flour while making the dough also the size of the poori should not be more than about 2 inches in diameter.. use a rolling pin to roll out the pooris .. ensure that the oil is really hot....i'm sure you'll get it .. all the best !

  • I have tried the recipe for this from cookbooks and have failed.I made it using your recipe and it was PERFECT.I could enjoy eating chaat here just bz of this video.Thank you so much!

  • if it is easily available, and you need small quantities, it is still better to buy out, but just to try out the challenge ( which is why i did it ) or if it is not easily available then i suggest you make it ..:-)
