He's using the iPhone Simulator on his Mac. He is using the SDK.

nope. it's the iPhone Simulator. it's so plain to see. look. his dock is right below the iPhone simulator. Plus when he types, he's typing on his keyboard, that's why the keys don't pop up. You have that option. You can type it with the keyboard on your Mac, or you can use the iPhone simulator's keyboard.
