slide against cover while rapidly tapping the A button and right when u hit the cover that u are sliding against roll to the right or left (helps if it is at an angle)

so do you need to double side mount everytime you want to levitate? or just the once?

You can do it just once if you like, but we've noticed that you get higher after Side Mounting twice.
