@lizardmannnn Half & Half is equivalent to 'full cream milk'. (same ratio to milk and cream that comes out of the cow before its separated into homogenized, trim, skim etc etc). The 'LABELING' "Half and Half" is only available in USA, so anyone outside of the states won't know what half and half is.
White chocolate isn't chocolate. You didn't follow the recipe, so it makes perfect sense that it didn't turn out. That's not Dyann's fault, it's yours. Try again.
Be careful testing the hot sugar to see if it's melted! I burned the hell out of my finger doing that when I was a kid! Dip a spoon and let it cool before doing the finger-rub.
I have a different recipe that is also quite good. It's easy, everyone loves it and you don't need a candy thermometer! (I may try this sometime to compare!:)
But IS there any alternative to corn syrup. I live in the UK (west midlands) and I just can't get hold of the stuff. Either that or does anyone know of somewhere to get it over here? Even those massive Tesco superstores don't have it.
Ooh, golden syrup is perfect ^_^ I am never without it. And I suppose the flavour would be more... golden syrupy. I love the taste, I can eat it out of the tin...
Thanks econ003, you are absoloutely right. It has nothing to do with economics, and corn syrup being an inexpensive ingredient. There is a chemical reaction that happens that keeps the sugar from crystalizing and keeps things smooth. Fudge may not be the healthiest thing, but most candy isn't! :)
since i was 3 i always watched cooking and baking shows, i'm now 20 and i want to achieve my dream...i simply love cooking and baking and watching ur videos encouraged me...BIGTIME!...i'd love to see u make fondant from scratch...the thing that they decorate and cover the cakes with...its called fondant, right?
Hey..so happy to hear you are encouraged and looking to acheive your dreams! Yes, fondant is used to cover cakes, and honestly, usually tastes pretty bad. You are not the first to request this, so we will definetly do a show on it!
ok this is awsome but can i ask u something? if i put halfn half, sugar and heat it for 5 to 10 minutes then add chocolate and add a pinch of salt and stir would it be like liquid fudge?
i love your videos, your recipes are great and your so professional, you should be on the food network or something! also, i've never had fudge :( it sounds and looks so good..
I don't think parchment is a good substitue. Buy a randomly sized piece of marble, or go to a tile store and buy a "sample" piece of tile (they may even give it to you free of charge...so ask!). I do have a recipe for divinity, so please drop me a note on the website, and then i can forward it to you (dyannbakes dot com)
I really appreciate your detail in teaching, thank you so much! I do not have a marble slab but will purchase one. What size should I request? Would parchment paper work in place of foil?
I was wondering if you have a divinity fudge recipe that you share?
Dyann, thank you so much to let us know about your recipies, I wish you can put more recipies please. I want to learn more. THANK YOU, YOU ARE WONDERFUL.
Aren't YOU wonderful! Thank you for your kind words. Please let me know what sorts of recipes and videos you would like to see. We LOVE hearing from you and what you want!
I think I would have used a rubber spatula to help transfer it to the pan, but your way looks more like finger licking fun :) I'm going to try this recipe. Thanks! mmmmm chocolate.
You can find unsweetened chocolate and any grocery store in the baking aisle. Okay, does anyone remember as a kid finding Mom's unsweetened chocolate in the kitchen cabinet and tasting it? yuck...without the sugar. LOL
Mmmm. I love to make fudge in addition to cookies for holiday gift-giving. It's so much easier than people think. You just need that handy dandy candy thermometer. Mine costed me about $12.00 at Target.
I really love this video. Please respond back.

It is no wonder ur fudge sucks.

if the thermometer's there and u walk away from the stove, who's gonna monitor it?!

you don't have to watch the themometer every moment. It is clipped to the side of the pot and not walk to far away from the stove

Do you have golden syrup? That can be used in it's place.
DyannBakes 4 years ago
Ooh, golden syrup is perfect ^_^ I am never without it. And I suppose the flavour would be more... golden syrupy. I love the taste, I can eat it out of the tin...
Sanisgillon 4 years ago
Why the corn syrup? It's such a cheap additive... Can it be skipped altogether or substituted with something healthier? Thanks!
thundergods 4 years ago
It is to help keep the fudge from crystallizing. Some people use marshmallows instead. They are mostly corn syrup also.

Half and half is an equal mixture of heavy cream and whole milk. 1 cup of half and half is 1/2 cup of heavy cream and 1/2 cup of milk.
