  • Its a kind of milk If your parents drink coffee you probably have some.

  • @lizardmannnn Half & Half is equivalent to 'full cream milk'. (same ratio to milk and cream that comes out of the cow before its separated into homogenized, trim, skim etc etc). The 'LABELING' "Half and Half" is only available in USA, so anyone outside of the states won't know what half and half is.

  • Be careful testing the hot sugar to see if it's melted! I burned the hell out of my finger doing that when I was a kid! Dip a spoon and let it cool before doing the finger-rub.

  • you don't have to watch the themometer every moment. It is clipped to the side of the pot and not walk to far away from the stove

  • But IS there any alternative to corn syrup. I live in the UK (west midlands) and I just can't get hold of the stuff. Either that or does anyone know of somewhere to get it over here? Even those massive Tesco superstores don't have it.

  • It is to help keep the fudge from crystallizing. Some people use marshmallows instead. They are mostly corn syrup also.

  • Thanks econ003, you are absoloutely right. It has nothing to do with economics, and corn syrup being an inexpensive ingredient. There is a chemical reaction that happens that keeps the sugar from crystalizing and keeps things smooth. Fudge may not be the healthiest thing, but most candy isn't! :)

  • Half and half is an equal mixture of heavy cream and whole milk. 1 cup of half and half is 1/2 cup of heavy cream and 1/2 cup of milk.

  • I don't think parchment is a good substitue. Buy a randomly sized piece of marble, or go to a tile store and buy a "sample" piece of tile (they may even give it to you free of charge...so ask!). I do have a recipe for divinity, so please drop me a note on the website, and then i can forward it to you (dyannbakes dot com)
