I guess he was similar to CELL from Dragon Ball Z. You need to kill every part of him at one time with one attack or else he just comes back again. This guy is actually potentially stronger then Cell because he will come back stronger then he was before but Cell would just come back the same as he was.
Um. actually it didn't die here. It's power was the ability to grow and evolve almost in an instant. It gets seriously hurt with whatever oyu hit it with the first time then it heals and oyu can never use the same attack again. It got up after this after removing infected cells(shot with bullets filled with Aye's evolved mitocondria) and started chancing you again. As a last attempt to stop him you burn/drown/starve the thing to death in one shot without giving him a chance to adapt.
