I've understand the basic workflow, but what is over the flashlight (maglight, i guess). I can see a dome and also flat things to colour the light, but what can that be? what is it??

It's calles stop animation. By taking a large number of snapshots close together, you can then put them together to make it look like you are filming. In many ways, its the same concept as drawing a multi-frame cartoon on a flip book and flipping through the pages.
