  • @frantahouska It's not about butter vs olive oil. They've each got their proper place. It's about moderation. Only an idiot would think that one completely replaces the other. Try making a Bearnaise, a Hollandaise or a Beurre Blanc with olive oil. And then get back to me.

  • @belenbutt By the way, if you check out the majority of clips on YouTube about searing scallops, you'll discover that the vast majority use butter (clarified or not) to give the scallops the proper brown sear. Don't want to take my word for it? Take theirs.
