Old Nassau refers to Nassau Hall, the building that was built in 1756 and named after William III of the House of Orange-Nassau. When built, it was the largest college building in North America. It served briefly as the capitol of the United States when the Continental Congress convened there in the summer of 1783. By metonymy, the term can refer to the university as a whole.

Speaking as a Princeton alum, it's definitely Yale blue. We couldn't give two hoots about Columbia :)
