It's called a "harmonic" (or "chime" in Hawaiian music). Just touch the string gently directly above the 12th fret, pluck it, then immediately remove your finger from the string. You can also do them on the 7th fret, although it's a lot harder on a uke than on a guitar (where you can also get them on the 5th fret), especially as the scale gets shorter.

My father is a classical guitarist. He used to teach Spanish classical guitar in the University of the Philippines before he moved to the United States. He plays this often and he taught it to me on guitar as well (half of it at least).

Really nice! Do you find learning guitar has changed the way you look at the uke? When I played guitar only I never thought of playing really sweet songs like Carpenters or Disney. But the uke has expanded my interest in different genres and styles.
