  • why don`t u use a stand mixer and dough hook for the whole thing? i do mine that way, cook 7 loaves every sunday for my family 60/40.

thanks for the vids just found u so i will be subing and watching all.

  • @dexterquincy1 I do it by hand in the video for a couple reasons. 1. I think people need to learn the basics first, then they can cut corners with machines. 2. Not everyone has the luxury of a stand mixer. I bake bread every other weekend and I always use my stand mixer, but when I cook in front of the cameras I mostly do things by hand. Getting the hands into the food helps to learn how mixes should feel when they are correct.

  • Nice job.:) Keep posting;)

  • "I made myself laugh", you made me laugh too. Thanks for the video. :)

  • When did you add the salt?

  • @biosteelgirl At about 9 minutes 20 seconds into the video you'll see me adding the salt. I mention it briefly. I typically add the salt with the last of the flour before I start kneading. I hope that helps. —Dennis

  • @whitetrashcookingcom I am so dumb, i forgot adding salt. Just put the bread in the oven, that is my first time baking bread. Hope not too bad :)

    Thank you

  • @biosteelgirl I can't tell you how many times I forgot to add the salt. Stuff happens. —Dennis

  • I use a food processor with a dough blade for all my breads and it works well and is faster. The machine does the kneading. I make Italian bread, and the only difference is you use 2 T of olive oil in the dough. I did get a better clue of how to shape it from this video. Excellent video and keep em coming.:o)

  • @Tonithenightowl Thanks for the positive feedback. I have a big stand mixer and even when I "knead it by hand" in the video, I secretly move the dough to the mixer and let it do all the work. —Dennis

  • @whitetrashcookingcom It's still great that you show it by hand for those that don't have the contraptions we do.I also use my kitchen aid mixer for bread doughs like ciabatta that require more kneading and less flour. That's where a dough hook does the job better than a food processor. At my age I take all the help I can get from machines to save on my hands, but I did it the old fashioned way for yrs.and it's a good thing to know. :o) Toni

  • This is an interesting video Denis. Your nice and pleasant personality made me actually try baking French bread. In fact, it's getting ready as we speak. I also logged on to your website and checked out everything you have on there. I’m recommending your web page to everyone I know. Thanks and God Bless.

  • @beyondtheimagination Thanks for the positive feedback and the recommendations. I hope your bread came out well. Sorry I took so long to respond. I'm really trying to get caught up with my email. —Dennis

  • Awesome video dude! Been looking for a video like this for a while now, thanks a million. Don't worry about the rude comments you get on your videos, trolls will be trolls.

  • Such an odd comment. I check the internal temperature with a digital thermometer. I know the bread is thoroughly cooked. Oh well. I did give away the second loaf as planned. I received a wonderful Thank You card. They said the bread was perfect and delicious. That counts more with me than a comment like this.

  • 3-17-11, As soon as you said you had been baking bread for ten years I knew you were a 'phony'..! Fuck-off Dennis and come back when you know what you're doing..! Anybody suffering through can tell that when you cut it open it wasn't done. Now you know what raw bread dough tastes like. What a jerk..! Did you wash your hand's...?pssst
