If you have a cooking school, presentation is just as important as the taste. Presentation is horrible on this. If air is needed to keep the center aloft, then make and serve right before serving... This is just badly done, and not very professional.

In my country we call it Dobos torta, but there are 10 sponges all stacked on top of each other and they are very thin.

Looked like a collaped sponge cake! But as we all know presentation isn't always that important the important thing is how it tastes.

@DIMATIF Because it's a flour-less cake made with a lot of eggs, it behaves somewhat like a soufflé. It's as light as a feather inside!
