It was mostly because poeple complained about character clones.
The reason sheik was removed is simple, its because she was a double character.
What i mean is that when you choose Zelda you got tons of advantage, because of the change of character in battle.

I beleive the only official characters thus far that have been confirmed by the creator are Metaknight, Pitt, Zero Suit Samus, Wario, Snake, Diddy, Bomberman, Ridley, Deoxys, and Sonic.

Err, about $250 US. And about $50 per game. PS3 will cost $65-70 per game. Rock on cheap games! Go Nintendo!
